I am giving you fair warning that this no bake cookie butter cookies recipe is dangerous to have on hand. Why? Because it comes together really quickly and you most likely already have all the ingredients on hand! If you haven’t tasted the wonder of cookie butter yet, DON’T do it!! It is WAY too good and too hard to resist. However, if you already know how addictive it is, then by all means indulge yourself with these cookies for a cookie swap or as a quick change up for pumpkin pie at Thanksgiving.

No Bake Cookie Butter CookiesIn fact, with Black Friday coming up, these could be a fun cookie to have on hand to fuel your shopping!! Trader Joe’s Speculoos Crunchy Cookie Butter can be shipped to your door via Amazon (affiliate link) or you can pick up different brands at your local grocery store. These FANTASTIC no bake cookie butter cookies are well worth every single calorie. The hubs and I liked them because they weren’t too sweet and had a good texture with the oats.

Confession: These are so good that by the time I was writing this post, the cookies were long gone but I had to get a teaspoon full of cookie butter to satiate my craving!

Cookie Butter Cookies
Serves: 12 cookies
 
Ingredients
  • 6 T butter
  • ¼ cup milk
  • 1.5 tsp vanilla
  • 2 cups rolled oats
  • ⅓ cup cookie butter
  • wax paper
Instructions
  1. In a small saucpan, bring the butter, milk and vanilla to a boil over medium heat.
  2. Remove from heat and stir in rolled oats and cookie butter.
  3. Drop rounded spoonfuls onto wax paper.
  4. Cool before eating.
