Hey friends! This week, as a part of our summer salad series, I’m bringing you a fresh and delicious healthy berry salad recipe. This recipe is for the lovers of all things sweet but with a hint of tang. The creamy tanginess of the goat cheese combined with the crunch of the pistachios makes this salad figure-friendly and also oh-so-satisfying.
What’s even better? With summer almost here, these delicious berries will be in season which means they will be plentiful at your local grocer. You can hopefully score them for a great price too. Double win!
You may have seen last week’s Chickpea Salad Recipe, which I love to whip up as a side to grilled chicken (or better yet, Eric’s famous wings). - 1 cup of blueberries
- 1 cup of blackberries
- 1 cup of pistachios
- 1/2 cup of crumbled goat cheese
- 3 cups of spring mix
- 1/2 cup of raspberry vinaigrette
