This recipe is definitely a splurge, but the texture of these light and fluffy cakes and the taste of this lemon cream cheese icing is perfection! While the cupcake is not to be dismissed, the icing is so delicious that it could be the star of the show and be used nicely on a store-bought cake mix. So whether you need a quick dessert or want to dabble in the kitchen to create, this is the cupcake recipe for you.

 Lemon Cream Cheese Icing Recipe:
- 1 (8 oz) package cream cheese, softened
- ¼ c. butter
- 2 tbsp lemon juice
- 2 tsp lemon zest
- 1 tsp vanilla extract
- 5 c. confectioners sugar
- Place cream cheese and butter into bowl.
- Beat the the first 2 ingredients together.
- Add in everything else and beat until fluffy.
