With the temperatures rising, I have less of a desire to spend more than… ehh… 20 minutes preparing food in the kitchen. Anyone else feel the same way? I thought so! That’s why most of the go-to recipes I make in the summer are simple, fresh ingredients, and can be made right before lunch or dinner, without a ton of time involved. I think we all would rather be out in the sprinkler or pool with our littles than standing over a hot stove!
This chilled Chickpea Salad a regular part of my meal planning rotation, and once you try it, I have a feeling it will be a part of yours too! I’m all about no muss, no fuss “cooking” when I can be!

- 1/8 of a cup of stone ground dijon mustard
- 1/8 of a cup of olive oil
