This is pretty much the best casserole I’ve ever made or feel like I need to make. I got this recipe from my mother-in-law and it has served me well over our 11 years of marriage so far. I have made it A LOT over the years for BRINNER (breakfast for dinner), company, and just to last us on a tightly budgeted week. I’m making this recipe again this week, so it reminded me that I should share it here with you guys.

This dish makes a ton of food, so it’s great for weeks when I don’t want to have to cook a lot during the week and we need plenty of leftovers. It is so good that Eric and I will sometimes fight over who gets to finish it! We take ours smothered in ketchup, please.

I encourage you to try this for your next family breakfast or when you’re hosting, I promise, everyone will be asking for the recipe!

Best Breakfast Casserole Recipe:

The Best Classic Breakfast Casserole
Serves: 8
 
Ingredients
  • 8 eggs
  • 2 c milk
  • 7 slices white bread torn into small pieces (take off the crust)
  • 1 t salt
  • 1 t mustard
  • 1 lb crumbled breakfast beef or turkey sausage (cooked)
  • 1 & ½ c shredded cheddar
Instructions
  1. Beat eggs, add milk, sausage, bread & seasonings.
  2. Bake at 350 for 45 min or until done.

    Breakfast casserole is one of my favorites. My mom always makes on Christmas day, so it’s an annual treat. I don’t know why I don’t make it more often.

    I come from the rare house where casseroles were never a thing we had — like ever. So now, naturally, I am fascinated by them and how easy they can be — especially when they make a lot that can be enjoyed for weeks like this breakfast casserole. Sounds delicious!

    This looks delicious! One thing I hate about recipes is sometimes they look so difficult! I love that this recipe is made out of common ingredients and looks easy to make! I will definitely be trying this sometime in the near future!

    I love brunch! If I wasn’t trying to lose weight I would add this to my list right away….lol I am adding it anyway. I guess I will just pray that I can control myself.

    How do you suggest I incorporate potatoes?

      We’d suggest cooking hashbrowns in a skillet, add it to a bowl mixing in peppers and onions as well as whatever breakfast meat (cooked) you want and mix all together. Put in bottom of pan and pour over the egg and milk mixture. We made a similar recipe today that was delicious this way. Merry Christmas!
